When's the last time you stepped outside what was comfortable? How often do you push yourself?
I made a realization recently that I live my life "safe". I almost never take risks, and in fact I strongly balk against new things. It creates a very comfortable but boring life. I feel unfulfilled as a result. So, I've decided to purposefully try new things and step outside my comfort zone with a positive mindset towards change. Who wants to make this resolution with me??
This soup recipe was a step outside my comfort zone. I was unsure it was going to turn out well because I was CONVINCED I was going to wreck it somehow. Because it was new. Also, I made this recipe later in the day, and the lighting for the pictures I took was much darker. So I was trying to photograph this food differently. New things everywhere!
But guess what? It worked. Beautifully. This soup is delicious! I should've known, because the recipe comes from With Food And Love. Sherrie creates food that blows my mind. Creamy Corn Soup With Fresh Oregano Oil
- 2 tbsp olive oil
- 1 medium white onion, diced small
- salt and pepper
- 1 cup fresh sweet corn kernels
- 1/2 cup water
- oregano oil to garnish
- 1 cup sunflower or olive oil
- 1 cup fresh oregano
- 2 tbsp lemon juice
- salt to taste
Soup: Heat oil in skillet over medium heat. Season onions with salt and pepper and brown for 5 minutes, stirring occasionally. Add corn and saute 2 minutes more. Turn heat to high, add water, and simmer for a minute. Remove from heat and place soup in blender. Blend until smooth and creamy. Serve with oregano oil.
Oregano Oil: Place all ingredients in blender and process until smooth.
