Green Smoothie

I have found that if one struggles with eating greens for the day, a good way to incorporate them is in a smoothie. Smoothies are perfect, because they’re easily customizable, packed with nutrients your body needs, and are portable. I’ve been wanting to try this specific recipe for awhile, inspired by Anya Kassoff’s cookbook, The Vibrant Table.


Anya’s blog and book(s) are so inspiring to me! She started her journey by looking for answers to health issues in her diet, just like me! She’s brilliant with recipes, which are vegetarian, vegan, or raw foods. This smoothie recipe is EXTREMELY nutritionally concentrated and energizing. Omg, I felt amazing after sipping it; this is a breakfast I will consistently revisit! It isn’t overly sweet, a taste that I for some reason am not really a big fan of. Next time I will throw a big chunk of ginger in and give it some extra zing.


Green Smoothie From A Vibrant Table

  • 1 bunch spinach (I used an entire case of it that I’d bought from Aldi) or any other type of green

  • 1 ripe banana

  • 1/2 cup frozen fruit/berries

  • 1/2 ripe pear

  • 2 cups purified water

  • 1/2 avocado

  • Tear the spinach into pieces to make them easier to blend. Place a handful of leaves, all the fruit, and the water into a blender. Blend until liquified, adding more greens a handful at a time until all the greens are added and mixed together well. The final consistency should be creamy. Enjoy and energize your morning!
