Sweet Potato Bowl With Creamy Dijon Lemon Sauce and a Fried Egg

Quick improv blog post here! Since this was an improv meal, there’s not any deep story for me to tell. I’ve been making an effort to eat lighter, and this meal made me feel lovey emotions about vegetables. They’re just so effing good. They’re so versatile. You can do so. Much. With. THEM. So! Sweet Potato Bowl With Creamy Dijon Lemon Sauce and a Fried Egg

The recipe for the veggie mixture will leave you with leftovers. Roll up in a tortilla, pair with salmon and rice, mix in pasta, the choices are endless!

  • 1 package of cremini mushrooms, thinly sliced

  • 1 yellow onion, finely diced

  • large handful spinach (I had some almost wilted parsley, so I added that in, too)

  • 1 sweet potato, peeled with ends trimmed

  • 1 red bell pepper, seeded and sliced

  • 1 egg

  • small handful of roasted cashews, chopped


  • 1 tbsp extra virgin olive oil

  • 1 tsp dijon mustard

  • 1/2 lemon, juiced

  • 1/2 tsp agave nectar (use honey, maple syrup, etc if you don’t have agave)

  • 1 tbsp Greek yogurt

Heat a pot of water to a boil, then add in peeled sweet potato. Boil for 25-30 minutes. Meanwhile, mix together the ingredients for the sauce in a small bowl until creamy and set aside. Heat butter/oil in a large skillet over medium-high heat. Add mushrooms and onions to pan, stirring frequently. Once soft, add in red pepper. Saute until the mushrooms and onions are slightly brown, then add in the spinach, stirring constantly until wilted. Remove veggie mixture from the pan and set aside. Reduce the heat to medium, then add a little more butter or oil. Once hot, crack open an egg in the pan and top with salt and pepper. Fry until whites are set, then set aside. Once potato is boiled, remove from the pan and place in a shallow bowl. Mash until broken down, then top with the veggie mixture and egg. Drizzle with the sauce and sprinkle cashews on top. Then fall in love!
